  1. Prepare Parippu Curry (25 mins, medium heat): Boil toor dal with turmeric, cook until soft. Temper mustard seeds in coconut oil, add curry leaves, pour into dal with coconut milk. Visual: creamy, golden appearance.
  2. Make Sambar (35 mins, medium heat): Cook vegetables with sambar powder, tamarind, add cooked dal. Visual: vegetables tender, sauce coats back of spoon.
  3. Prepare Kalan (25 mins, medium heat): Cube plantain and yam, boil with turmeric, add coconut-yogurt paste. Visual: vegetables should be completely soft.
  4. Assemble on banana leaf (5 mins, no heat): Layer rice, top with all curries and vegetables. Serve hot.
