👩‍🍳 How to make Olan with Cowpea

  1. Prepare ash gourd (5 mins, no heat): Peel ash gourd, remove seeds, cut into 2cm cubes. Measure 400g. Visual: cubes uniform size, pale white color.
  2. Combine (5 mins, medium heat 160°C): Add cooked cowpeas and thin coconut milk to ash gourd pot. Add green chilies, curry leaves, salt. Simmer gently. Visual: vegetables should be completely soft, liquid should be slightly creamy.
  3. Add thick milk (5 mins, low heat 130°C): Slowly add thick coconut milk, stirring gently. Heat through without boiling. Visual: sauce becomes pale white, creamy appearance. Do NOT boil or curry will split.
  4. Finish (2 mins, no heat): Remove from heat, add coconut oil, stir gently, cover. Visual: glistening pale white curry with glossy surface.
