- Slice plantains (5 mins, no heat): Peel plantains, slice thin (2-3mm) using mandoline or sharp knife. Soak in water 2 minutes. Pat dry with cloth. Visual: thin, uniform slices.
- Heat oil (3 mins, high heat): Heat coconut oil in deep pan to 180°C. Test temperature with one chip—should sizzle immediately. Visual: oil surface shimmers.
- Fry chips (8 mins, high heat): Fry chips in batches, do not crowd. Fry until light golden and crispy. Visual: chips curl slightly, turn golden.
- Drain (2 mins, no heat): Remove with slotted spoon, drain on paper towels. Sprinkle salt immediately. Visual: chips become completely crispy as they cool.
