  1. Marinate mutton (10 mins): Mix mutton with 2 tbsp ginger-garlic paste, 1/2 tbsp Kashmiri chili powder, 1/2 tsp turmeric, and salt. Let sit for 10 minutes.
  2. Pressure cook (20 mins): Heat 1 tbsp coconut oil in pressure cooker on high heat. Brown marinated mutton pieces in batches for 2 minutes each. Add remaining ginger-garlic paste, 1/4 cup water, and salt. Close and cook for 1 whistle on high, then 5 whistles on medium heat. Release pressure naturally. Mutton should be fork-tender.
  3. Fry onions (5 mins, medium heat): Heat 2 tbsp coconut oil in separate pan. Add sliced baby onions and fry for 4-5 minutes until golden and crispy at edges. Transfer to plate.
  4. Roast spices (2 mins, medium heat): In same pan, add crushed dried chilies, remaining Kashmiri chili powder, coriander powder, black pepper powder. Roast for 1-2 minutes until fragrant.
  5. Combine (6 mins, medium heat): Add cooked mutton to spice mixture. Add fried onions and curry leaves. Cook on medium heat for 5-6 minutes, stirring frequently. Mutton should brown further and masala should cling to pieces.
  6. Final roasting (2 mins, medium-low heat): Cook until meat develops caramelized exterior and is dry, not moist. Each piece should have charred edges.
