- Temper oil (1 min, high heat): Heat coconut oil, crackle mustard and fenugreek seeds. Visual: seeds pop and turn brown.
- Add curry leaves (30 secs, high heat): Add curry leaves, fry briefly.
- Add spices and mutton (5 mins, medium-high heat): Add turmeric, red chili powder, black pepper, mutton, salt. Cook 3 minutes. Visual: mutton browns on outside.
- Pressure cook (20 mins, medium heat): Add 1.5 cups water, tamarind paste. Bring to boil, pressure cook for 3 whistles. Visual: mutton becomes tender.
- Add coconut milk (10 mins, low heat): Open cooker, add coconut milk, green chilies. Simmer until sauce thickens. Visual: sauce coats meat, mutton very tender.
