👩🍳 How to make Murukku
- Mix dry ingredients (4 mins, room temperature): Combine 150g rice flour, 40g roasted gram flour, 20g urad dal flour, 2g chili powder, 15g sesame seeds, 1g ajwain, 0.5g asafoetida, 5g salt in large bowl. Mix thoroughly.
- Add ghee and water (3 mins, room temperature): Add 30ml ghee, then 60ml warm water gradually. Knead to stiff dough—dough should hold together but not be wet. Should be moldable but not sticky.
- Fill murukku maker (5 mins, room temperature): Load dough into murukku maker (spiral/chakli extruder). Have 2.5 cups oil heating to 330°F/165°C.
- Extrude and fry (15 mins, medium heat): Heat oil to 330°F/165°C. Hold murukku maker over hot oil. Extrude dough in long spiral (6-7 inches/15-18cm), press cutter to release. Fry immediately. Do 3-4 murukku at a time. Fry 3-4 minutes per side until golden and crisp, turning once. Should crackle and be very crispy.
- Drain and cool (3 mins): Transfer to paper towels. Cool completely before storing in airtight container (lasts 2-3 weeks).
