  1. Mix dry ingredients (4 mins, room temperature): Combine 150g rice flour, 40g roasted gram flour, 20g urad dal flour, 2g chili powder, 15g sesame seeds, 1g ajwain, 0.5g asafoetida, 5g salt in large bowl. Mix thoroughly.
  2. Add ghee and water (3 mins, room temperature): Add 30ml ghee, then 60ml warm water gradually. Knead to stiff dough—dough should hold together but not be wet. Should be moldable but not sticky.
  3. Fill murukku maker (5 mins, room temperature): Load dough into murukku maker (spiral/chakli extruder). Have 2.5 cups oil heating to 330°F/165°C.
  4. Extrude and fry (15 mins, medium heat): Heat oil to 330°F/165°C. Hold murukku maker over hot oil. Extrude dough in long spiral (6-7 inches/15-18cm), press cutter to release. Fry immediately. Do 3-4 murukku at a time. Fry 3-4 minutes per side until golden and crisp, turning once. Should crackle and be very crispy.
  5. Drain and cool (3 mins): Transfer to paper towels. Cool completely before storing in airtight container (lasts 2-3 weeks).
