  1. Prepare radish (5 mins, no heat): Peel white radish, grate on fine grater. Squeeze gently to remove excess moisture. Visual: radish should be moist but not wet.
  2. Temper oil (1 min, high heat 180°C): Heat coconut oil, add mustard seeds. Visual: seeds crackle and pop.
  3. Add aromatics (2 mins, medium heat 160°C): Add shallots, fry until light golden. Add turmeric, green chilies, curry leaves. Visual: shallots turn translucent.
  4. Add radish (8 mins, medium-high heat 170°C): Add grated radish, salt, stir well. Cook uncovered to evaporate moisture. Visual: radish will soften, liquid evaporates, becomes light golden color.
  5. Add coconut (4 mins, medium heat 160°C): Add grated coconut, black pepper. Stir continuously. Visual: coconut turns light golden, entire mixture becomes drier and more fragrant.
