  1. Soak rice (30 mins, no heat): Wash rice, soak in water 30 minutes. Visual: water becomes milky.
  2. Boil water (3 mins, high heat): In large pot, bring 4 cups water to rolling boil with whole spices and salt.
  3. Add rice (1 min, high heat): Add soaked rice, stir once. Bring back to boil. Visual: rice grains begin to float.
  4. Drain and finish (3 mins, medium heat): Drain rice in colander, return to pot. Add ghee, green cardamom. Cover, place on very low heat 3 minutes. Visual: rice becomes fluffy, each grain separate.
  5. Fluff (1 min, no heat): Remove from heat, let rest 2 minutes covered. Fluff with fork.
