  1. Grind (2 mins, no heat): Blend mint leaves, coriander, green chilies, ginger, coconut, salt with water and lime juice to smooth paste. Visual: bright green, fragrant.
  2. Transfer (1 min, no heat): Transfer to bowl.
  3. Temper (1 min, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves.
  4. Combine (1 min, medium heat): Pour tempering, mix gently.
  5. Serve (1 min, no heat): Serve immediately, fresh aroma preserved.
