  1. Temper oil (1 min, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves. Visual: seeds pop and turn golden brown.
  2. Add aromatics (1 min, medium heat): Add julienned ginger, slit green chilies, fry briefly. Visual: fragrant.
  3. Add coconut milk (8 mins, low heat): Pour coconut milk carefully, add black pepper. Simmer gently. Do NOT boil. Visual: fish becomes completely opaque and flakes easily, sauce is creamy.
  4. Finish (1 min, low heat): Add lime juice, adjust salt. Heat through gently.
