👩🍳 How to make Meat Ball Curry
- For curry:
- 200ml thick coconut milk
- 150ml thin coconut milk
- 1 large onion, sliced
- 2 tbsp ginger-garlic paste
- 2 medium tomatoes, chopped
- 4 green chilies, slit
- 10-12 curry leaves
- 2 tbsp Kashmiri chili powder
- 1 tbsp coriander powder
- 4 tbsp coconut oil
- 1/2 cup water
- Salt to taste
- Make meat balls (10 mins): Mix minced meat with soaked bread, chopped onion, 3 tbsp ginger-garlic paste, minced green chilies, coriander, egg, garam masala, turmeric, and salt. Mix gently without overworking. Shape into 16-18 balls. Keep on plate.
- Boil meat balls (5 mins, high heat): Bring water to boil with salt. Gently drop meat balls and boil for 4-5 minutes until they float and are cooked through. Remove with slotted spoon and drain.
- Brown onions for curry (3 mins, medium-high heat): Heat coconut oil, add sliced onions. Fry for 2-3 minutes until softened.
- Build spice base (3 mins, medium heat): Add ginger-garlic paste and cook for 1 minute. Add Kashmiri chili powder, coriander powder. Stir for 2 minutes; oil separates.
- Add tomatoes (3 mins, medium heat): Add chopped tomatoes, cover and cook for 2-3 minutes until broken down.
- Add thin coconut milk (1 min, medium heat): Pour thin coconut milk, bring to gentle simmer.
- Add meat balls (8 mins, medium-low heat): Gently add boiled meat balls to curry. Add green chilies and curry leaves. Cover and simmer for 6-8 minutes, shaking pan gently occasionally to prevent sticking.
- Enrich (2 mins, low heat): Pour thick coconut milk slowly, stirring gently. Simmer for final 2 minutes. Gravy should coat meat balls evenly.
