👩🍳 How to make Matta Rice Puttu
- Prepare filling (3 mins, no heat): Mix grated jaggery with 1/4 cup coconut. Mix cardamom powder. Keep aside.
- Heat ghee (1 min, medium heat): Heat 2 tbsp ghee in pan, add cashew pieces, fry until light golden. Remove. Add raisins, fry 30 seconds. Remove. Visual: cashews golden, raisins puffed.
- Mix batter (2 mins, no heat): Mix rice flour, remaining coconut, salt, remaining ghee, 1/4 cup water. Knead to smooth, firm dough.
- Layer in mold (3 mins, no heat): Oil cylindrical puttu mold. Alternate layers: dough, jaggery filling, fried cashews and raisins. Repeat layers. Press gently.
- Steam (8-10 mins, medium-high heat): Place mold in steamer vertically. Steam covered until cooked through and a skewer comes out clean. Visual: mold is hot to touch, steam stops coming out.
- Remove (2 mins, no heat): Push puttu out of mold onto plate using plunger.
