  1. Cube mangoes (5 mins, no heat): Peel raw mangoes, cut into small cubes. Keep aside.
  2. Temper oil (1 min, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves. Visual: seeds pop, leaves darken.
  3. Add sweetener and sour (5 mins, medium heat): Add jaggery, tamarind paste, stir well. Cook until thick. Visual: mixture becomes thick, paste-like.
  4. Add chilies (2 mins, medium heat): Add chopped green chilies, mix well. Visual: evenly distributed.
  5. Cool (5 mins, no heat): Cool completely. Pickle thickens further as it cools.
