👩‍🍳 How to make Kuthari Kanji

  1. Wash rice (3 mins): Rinse red matta rice in cold water 2-3 times until water runs clearer (it will always be slightly pink). Drain.
  2. Check consistency: Dip a ladle — the kanji should coat the ladle and flow off in a slow, continuous stream. It will thicken as it sits, so err on the slightly thin side when cooking.
  3. Serve: Ladle hot kanji into wide bowls — traditionally earthenware cups or steel tumblers. Drizzle 1/2 tsp coconut oil over the top. Serve all accompaniments on the side — the correct way is to eat a mouthful of kanji, then a bite of thoran, a bit of chammanthi, and a tiny piece of pickle in rotation.

Kuthari Kanji is the most ancient breakfast food of Kerala — prescribed in Ayurveda as a healing morning meal, it is served every day during the Karkidaka monsoon month (July-August) to cleanse and strengthen the body according to traditional medicine. ---
