  1. Grind coconut paste (3 mins, no heat): Grind coconut, green chilies, cumin seeds, black pepper to smooth paste. Add 3-4 tbsp water.
  2. Combine (5 mins, medium heat): Add coconut paste, red chili powder, jaggery, salt. Simmer until thick. Visual: should not be watery, mixture coats vegetables.
  3. Temper (2 mins, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves, pour over. Visual: oil glistens on top.
