  1. Temper oil (1 min, high heat): Heat 3 tbsp coconut oil, crackle mustard and fenugreek seeds (30 seconds). Visual: seeds pop, brown.
  2. Add curry leaves (30 secs, high heat): Add curry leaves, fry 30 seconds.
  3. Add prawns (3 mins, medium heat): Add prawns, green chilies, salt. Cook until prawns turn pink and curl. Do NOT overcook. Visual: prawns opaque, curled, pink throughout.
  4. Add sauce (5 mins, low heat): Add tamarind paste and coconut milk. Heat gently through. Visual: creamy sauce, prawns tender.
