👩‍🍳 How to make Kerala Breakfast Sadya Plate

  1. Make Kadala Curry (25 mins, medium heat): Heat coconut oil in a wide pan. Splutter mustard seeds, add curry leaves. Add onions and fry 8-10 mins until golden brown. Add ginger-garlic paste; fry 2 mins. Add tomato; cook 4-5 mins until broken down. Add coriander, chilli, turmeric; fry 1 min. Add pressure-cooked chickpeas with their cooking water. Simmer 10 mins. Stir in the dark-roasted ground coconut paste — this is the defining flavour of Kerala kadala curry. Simmer 5 more mins until gravy is thick, dark, and fragrant. Season with salt.
  2. Make Parippu Curry (10 mins, medium heat): Cook moong dal with turmeric and 300ml water until very soft, about 10 mins. Mash to a smooth, thick consistency. Season with salt. Temper with cumin seeds fried in coconut oil.
  3. Steam Puttu (15 mins): Moisten chemba puttu flour as in Recipe 70. Layer with coconut in the puttu mould and steam for 10 mins until steam escapes from the top.
  4. Make Coconut Chutney (5 mins): Grind 100g fresh coconut with 1 green chilli, small piece of ginger, and salt with just enough water to a coarse paste. Temper with mustard seeds and curry leaves in coconut oil.
  5. Arrange the Sadya Plate: On a large banana leaf or wide plate, arrange: 1 puttu cylinder on the left side; a cup of kadala curry next to it; a small portion of parippu curry; 1/2 ripe banana; 1 tbsp coconut chutney; 1 tsp mango pickle; 1 roasted papad. The banana acts as a palate cleanser between the spiced curry and the coconut puttu. Pour a spoon of parippu curry over broken puttu pieces — this is the traditional way to start the meal.
  6. Serve: All components should be hot and served simultaneously. The traditional order of eating: begin with parippu curry on puttu, then kadala curry, eat banana last, mango pickle throughout.
