👩🍳 How to make Jackfruit Chips
- Prepare jackfruit (10 mins, room temperature): Select half-raw, half-ripe jackfruit—flesh should be hard and retain texture. Cut lengthwise into thin wedges (⅛ inch/0.3cm). Remove seeds. Sprinkle ¼ tsp turmeric powder, mix well.
- Rest (5 mins, room temperature): Let sit 5-10 mins to allow turmeric to coat evenly.
- Heat oil (5 mins, high heat): Heat 2 cups coconut oil to 330°F/165°C. Oil must be hot enough to fry quickly without sogginess.
- Fry (10 mins, medium-high heat): Add jackfruit in batches. Stir immediately and intermittently to prevent sticking. Fry 8-10 minutes until golden brown and crisp. Pieces should break cleanly, not bend.
- Season and drain (2 mins): When crispy, add 1 tbsp saltwater (dissolve 1 tsp salt in 1 tbsp water) to oil. Mix gently. Strain to paper towel.
