  1. Prepare fish (3 mins, no heat): Pat fish fillets dry with paper towels. Mix turmeric, salt, lemon juice, apply on both sides. Rest 2 minutes.
  2. Prepare paste (2 mins, no heat): Mix green chilies, ginger, garlic, red chili powder, coconut oil, chopped curry leaves into paste.
  3. Apply paste (2 mins, no heat): Spread paste generously on both sides of fish. Visual: fish completely coated.
  4. Fry (10 mins, medium-high heat): Heat 2 tbsp coconut oil in tawa/griddle. Place fish carefully. Fry 4-5 minutes until bottom is brown and crispy. Visual: fish browns, edges curl slightly.
  5. Flip (5 mins, medium-high heat): Flip carefully, fry other side until brown and fish flakes easily. Visual: fish skin crispy, breaks apart when tested with fork.
