- Marinate fish (3 mins, no heat): Coat fish pieces with lemon juice, salt, turmeric. Rest 2 minutes. Visual: fish coated evenly.
- Prepare batter (2 mins, no heat): Mix besan, rice flour, salt, turmeric, red chili powder. Add water to form thick batter.
- Add aromatics (1 min, no heat): Mix in garlic, ginger, green chilies.
- Coat fish (2 mins, no heat): Coat marinated fish pieces in batter, ensuring complete coverage.
- Heat oil (3 mins, high heat): Heat coconut oil in deep pan to 180°C.
- Fry (5 mins, high heat): Gently drop fish pieces into hot oil, fry in batches. Fry 2-3 minutes until golden. Visual: fish golden, batter puffs.
