👩🍳 How to make Fish Olathiyathu
- Marinate fish (10 mins): Season fish steaks with 1/2 tbsp ginger-garlic paste, 1/2 tsp turmeric, salt, and 1 tbsp lime juice. Let sit for 10 minutes.
- Build base (4 mins, medium heat): Heat coconut oil, add onions and fry for 3 minutes until softened. Add remaining ginger-garlic paste and cook for 1 minute.
- Add spices (2 mins, medium heat): Add Kashmiri chili powder, coriander powder, black pepper powder. Stir for 2 minutes until oil separates from masala.
- Add tomatoes (4 mins, medium heat): Add chopped tomatoes and cook covered for 3-4 minutes until they break down. Stir occasionally.
- Final simmer (2 mins, low-medium heat): Uncover and simmer for final 2 minutes. Gravy should be moderately thick, coating fish evenly.
- Finish (1 min, low heat): Drizzle remaining lime juice. Turn off heat immediately.
