👩‍🍳 How to make Fish Biryani

  1. Marinate fish (3 mins, no heat): Coat fish with yogurt, turmeric, salt. Rest 2 minutes.
  2. Fry onions (6 mins, high heat): Heat 2 tbsp oil, fry onions until very dark brown. Remove most, keep some.
  3. Fry nuts (1 min, high heat): Fry cashews until golden. Fry raisins. Remove.
  4. Prepare rice (12 mins, high heat): Boil soaked rice in salted water with whole spices until 70% cooked. Drain.
  5. Layer (2 mins, no heat): In heavy pot, layer rice and fish. Top with onions and nuts.
  6. Bake (12 mins, medium heat): Cover tightly. Cook on low heat 12 minutes.
  7. Rest (5 mins, no heat): Rest covered 5 minutes.
