👩‍🍳 How to make Erachi Curry

  1. Temper oil (1 min, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves. Visual: seeds pop and turn golden.
  2. Add spices and beef (5 mins, medium-high heat): Add turmeric, red chili powder, black pepper, beef cubes, salt. Stir well, cook 3 minutes. Visual: beef changes color on outside, spices coat meat.
  3. Pressure cook (15 mins, medium heat): Add 1.5 cups water, bring to boil. Add tamarind paste. Pressure cook for 3 whistles. Visual: beef becomes tender.
  4. Add coconut milk (10 mins, low heat): Open pressure cooker, add coconut milk and slit green chilies. Simmer gently until sauce thickens slightly. Do NOT boil hard. Visual: sauce coats back of spoon, beef is very tender.
  5. Finish (2 mins, low heat): Adjust seasoning, ensure curry is well-combined.
