- Carefully separate 12 egg yolks from whites — no white must contaminate the yolks.
- Pass yolks through a fine sieve twice.
- Beat very lightly — just enough to loosen.
- The yolks should flow freely but not be frothy.
- Dissolve 400 g sugar in 400 ml water over high heat.
- Boil until one-string consistency (108°C).
- Add saffron water and rose water.
- Reduce heat to medium-low — the syrup should be at a very gentle simmer, not boiling.
