  1. Prepare cucumber (2 mins, no heat): Grate cucumber, squeeze excess water with cloth. Keep aside.
  2. Mix base (1 min, no heat): Whisk yogurt, add salt, sugar, mix well. Visual: smooth, pourable yogurt.
  3. Combine vegetables (2 mins, no heat): Add grated cucumber, minced green chilies, minced ginger, grated coconut to yogurt. Stir gently.
  4. Season (1 min, no heat): Add cumin powder, black pepper. Mix gently.
  5. Chill and serve (5 mins, cold): Keep raita very cold. Serve immediately.
