  1. Toast coconut (3 mins, medium heat): Heat 1 tbsp oil, add grated coconut, stir constantly to toast lightly. Visual: pale golden, fragrant. Remove and keep aside.
  2. Temper (1 min, high heat): Add remaining oil, crackle mustard seeds, add chana dal. Fry 30 seconds until golden.
  3. Add aromatics (1 min, medium heat): Add green chilies, ginger, fry briefly. Visual: fragrant.
  4. Combine (3 mins, medium heat): Add curry leaves, then cooked rice. Stir to separate grains. Visual: evenly mixed.
  5. Final mix (2 mins, medium heat): Add toasted coconut, salt, lemon juice if using. Mix well.
