  1. Grind chutney (3 mins, no heat): In blender, combine grated coconut, green chilies, ginger, garlic, cumin seeds, salt, water. Grind to smooth paste. Visual: creamy, light green.
  2. Temper (1 min, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves. Fry 30 seconds.
  3. Combine (1 min, medium heat): Pour tempering over chutney, mix gently.
  4. Serve (1 min, no heat): Serve at room temperature with dosa, rice, or idli.
