👩‍🍳 How to make Chikhalwali Puttu

  1. Prepare filling (1 min, no heat): Mix jaggery with 1/4 cup coconut and cardamom powder.
  2. Mix dough (2 mins, no heat): Mix rice flour, remaining coconut, salt, 1.5 tbsp oil, 1/4 cup water to form soft dough.
  3. Fry nuts (1 min, high heat): Fry cashews in oil until golden. Fry raisins. Remove.
  4. Layer in mold (2 mins, no heat): Oil puttu mold. Layer dough, jaggery filling, nuts alternately.
  5. Steam (8 mins, medium-high heat): Steam covered until cooked and skewer comes out clean. Visual: mold hot, steam stops.
  6. Remove (1 min, no heat): Push out onto plate.
