  1. Prepare spinach (5 mins, no heat): Clean fresh spinach thoroughly under running water. Chop coarsely. Measure 600g loosely packed. Visual: should be vibrant green, no discolored leaves.
  2. Temper oil (1 min, high heat 180°C): Heat coconut oil, add mustard seeds. Visual: seeds pop and crackle.
  3. Add aromatics (2 mins, medium heat 160°C): Add shallots, fry until light golden. Add green chilies, curry leaves. Visual: shallots become translucent.
  4. Add spinach (5 mins, medium heat 160°C): Add chopped spinach, turmeric, salt. Stir well. Cook uncovered, stirring occasionally. Visual: spinach will wilt significantly, release water, become completely soft.
  5. Add coconut (2 mins, medium heat 160°C): Add grated coconut, black pepper. Stir well. Visual: coconut blends in, mixture becomes glossy.
  6. Finish (1 min, low heat 130°C): Remove from heat, let rest covered 1 minute. Visual: dark green, glossy texture.
