  1. Salt brinjal (3 mins, no heat): Slice brinjal thin, sprinkle salt, let rest 2 minutes. Squeeze out water. Visual: brinjal shrunken slightly, water released.
  2. Temper oil (1 min, high heat): Heat 1.5 tbsp coconut oil, crackle mustard seeds, add curry leaves. Remove and keep aside.
  3. Fry brinjal (8 mins, medium-high heat): Heat remaining oil, add brinjal slices in batches, fry until golden and soft. Visual: brinjal turns golden brown, becomes soft.
  4. Add aromatics (2 mins, medium heat): Add onion, garlic, ginger, green chilies, fry until onion is translucent. Visual: onion soft and light.
  5. Combine (2 mins, medium heat): Add turmeric, red chili powder, grated coconut, salt, fried brinjal. Toss gently. Add reserved tempering. Visual: well-combined, creamy.
  6. Finish (1 min, low heat): Adjust seasoning.
