- Soak and season (5 mins, room temperature): Mix banana slices with 5g salt and ½ tsp turmeric in bowl. Add 4 cups water, stir—this adds bright yellow color. Drain completely in colander.
- Heat oil (5 mins, high heat): Heat 2.5 cups coconut oil to 325°F/160°C. Oil should shimmer but not smoke.
- Fry (12 mins, medium heat): Spread slices on paper towel to avoid sticking. Drop into hot oil in batches. Stir occasionally. Fry 10-12 minutes until crisp and light golden—should snap when bent, not chewy.
- Drain and cool (3 mins): Transfer to paper towels. Cool completely before storing in airtight container (lasts 1 month).
