  1. Cut vegetables (10 mins, no heat): Cut all vegetables into uniform batons/pieces. Keep separate by type.
  2. Make coconut paste (2 mins, no heat): Grind coconut with green chilies, cumin seeds, black pepper to smooth paste.
  3. Combine (3 mins, low heat): Add coconut paste to vegetables with salt, turmeric. Stir gently. Visual: vegetables coated in creamy mixture.
  4. Temper (2 mins, high heat): Heat coconut oil, crackle mustard seeds, add curry leaves, pour over. Visual: oil glistens on surface.
