  1. Ferment batter (6 hours or overnight, room temperature): Blend rice, urad dal, coconut with 1/4 cup water to smooth batter. Add salt, sugar. Keep covered in warm place. Visual: batter rises and develops sour smell.
  2. Check fermentation (1 sec): Batter should have risen by 1.5x, with bubbles throughout. Smell should be sour and pleasant.
  3. Heat appam maker (2 mins, high heat): Heat appam pan/mold on medium-high heat until hot. Oil lightly.
  4. Pour batter (1 min, high heat): Pour fermented batter into mold, spreading thin on sides. Visual: batter starts cooking immediately.
  5. Remove (1 min, high heat): Pop appam onto plate. Should have lacy edges and soft, bowl-shaped center.
