👩🍳 How to make Anchovy Fry
- Marinate anchovies (10 mins): Toss anchovies with ginger-garlic paste, 1 tbsp Kashmiri chili powder, 1/2 tsp turmeric, salt, and 1 tbsp lime juice. Let sit for 10 minutes for flavors to penetrate small fish.
- Heat oil (1 min, high heat): Heat coconut oil in large shallow pan until very hot and shimmering. Do not smoke.
- Fry anchovies (6 mins total, medium-high heat): Carefully spread anchovies in single layer in hot oil. Fry for 3 minutes on first side without moving until golden and crispy. Stir and fry for another 3 minutes until all fish are golden and crispy throughout.
- Fry aromatics (2 mins, medium heat): In same oil, quickly fry onion slices for 1 minute until softened. Add curry leaves and green chilies, fry for 30 seconds until fragrant.
