- Mix rice and urad flours.
- Add yogurt and water, ferment overnight.
- Next morning, add vegetables, salt, cumin, chillies, ginger.
- Mix gently.
- Divide into greased idli mold cavities.
- Steam with boiling water for 12-13 min.
- Cool 2 min before removing.
