- Beat eggs lightly.
- Heat ghee, add onion, fry 1.5 min until soft.
- Add ginger and chilli, cook 30 sec.
- Add tomato, cook 1 min until slightly soft.
- Pour eggs over vegetables, cook 2 min until bottom sets.
- Fold in half, cook 1 more min.
- Add coriander.
