👩‍🍳 How to make Thekua

  1. Heat 30ml water, dissolve jaggery, cool slightly.
  2. Mix flour with fennel and cardamom.
  3. Add hot ghee, mix to breadcrumb texture.
  4. Slowly add jaggery syrup, knead into semi-soft dough.
  5. Rest 15 min.
  6. Roll into 20g balls, flatten, create cross-hatch pattern with fork.
  7. Fry at 160°C, 3-4 min per side until golden.
  8. Cool on paper towel.
  9. Visual cue: thekua should be golden-brown, very crispy, fennel visible, breaks easily.
