👩🍳 How to make Thekua
- Heat 30ml water, dissolve jaggery, cool slightly.
- Mix flour with fennel and cardamom.
- Add hot ghee, mix to breadcrumb texture.
- Slowly add jaggery syrup, knead into semi-soft dough.
- Rest 15 min.
- Roll into 20g balls, flatten, create cross-hatch pattern with fork.
- Fry at 160°C, 3-4 min per side until golden.
- Cool on paper towel.
- Visual cue: thekua should be golden-brown, very crispy, fennel visible, breaks easily.
