👩‍🍳 How to make Thekua

  1. Heat 30ml water, dissolve jaggery in hot water, cool slightly.
  2. Mix flour with fennel and cardamom.
  3. Add hot ghee to flour, mix until breadcrumb texture.
  4. Slowly add jaggery syrup, knead into semi-soft, stiff dough.
  5. Rest 15 min.
  6. Roll into 20g balls, flatten into discs (¼ inch thick), create cross-hatch pattern with fork.
  7. Heat mustard oil to medium-low heat (160°C).
  8. Fry 4-5 cookies at a time, 3-4 min each side until golden brown and crisp.
  9. Cool on paper towel.
  10. Visual cue: thekua should be golden-brown, crisp throughout, with visible fennel and cardamom bits.
