👩🍳 How to make Thekua
- Heat 30ml water, dissolve jaggery in hot water, cool slightly.
- Mix flour with fennel and cardamom.
- Add hot ghee to flour, mix until breadcrumb texture.
- Slowly add jaggery syrup, knead into semi-soft, stiff dough.
- Rest 15 min.
- Roll into 20g balls, flatten into discs (¼ inch thick), create cross-hatch pattern with fork.
- Heat mustard oil to medium-low heat (160°C).
- Fry 4-5 cookies at a time, 3-4 min each side until golden brown and crisp.
- Cool on paper towel.
- Visual cue: thekua should be golden-brown, crisp throughout, with visible fennel and cardamom bits.
