👩🍳 How to make Sattu Paratha
- Knead dough with salt and oil, rest 15 min.
- For filling: mix chickpea flour with onion, chillies, ginger, cumin, salt, and mustard oil.
- Divide dough into 6 balls.
- Roll each to 4-inch disc, place 2 tbsp filling in center, fold and seal edges, roll again to 6-inch thin paratha.
- Cook on tawa at medium-high heat, 2 min per side until light brown spots appear.
- Brush with mustard oil.
- Serve hot.
- Visual cue: paratha should have brown spots, be puffed slightly, and crackle when bent.
