- Heat ghee, add kneaded panir, cook over low heat 6-8 min stirring constantly until it becomes granular and slightly darker.
- Add jaggery, stir well until melted and mixed.
- Add cardamom, almonds, pistachios, salt.
- Cook 2 more min.
- Cool slightly.
- Shape into balls or barfi pieces.
- Cool completely on tray.
- Visual cue: sandesh should be golden-brown, firm yet moist, nuts visible, sweet cardamom aroma.
