👩‍🍳 How to make Rice Pudding

  1. Rinse rice.
  2. Heat ghee in heavy pot, add rice, stir 3 min until lightly toasted.
  3. Add milk, bring to boil.
  4. Reduce heat to low, stir occasionally.
  5. Simmer 25 min until rice is soft and milk reduces by half.
  6. Add jaggery, stir until dissolved.
  7. Add cardamom, cashew, raisins, saffron.
  8. Cook 2 more min.
  9. Visual cue: khir should be creamy, rice soft, golden color from jaggery, nuts golden.
