- Knead flour with oil, salt, water into stiff dough.
- Rest 15 min.
- Divide into 8 balls, flatten, roll into 4-inch discs.
- Heat mustard oil to 175°C.
- Slide puri into hot oil, it will sink then float.
- Fry 1 min per side until golden.
- Drain on paper towel.
