  1. Knead flour with oil, salt, water into stiff dough.
  2. Rest 15 min.
  3. Divide into 8 balls, flatten, roll into 4-inch discs.
  4. Heat mustard oil to 175°C.
  5. Slide puri into hot oil, it will sink then float.
  6. Fry 1 min per side until golden.
  7. Drain on paper towel.
  8. Visual cue: puri should be golden, puffed and hollow inside, light and crispy.
