  1. Marinate prawns in yogurt, ginger, chillies, salt for 15 min.
  2. Boil rice half-cooked.
  3. Layer rice and prawns.
  4. Dot with ghee, fried onions, coriander, mint.
  5. Cover tightly.
  6. Cook on high heat 3 min.
  7. Reduce to low, cook 15 min.
  8. Rest 5 min.
  9. Visual cue: rice fluffy, prawns pink and cooked, onions golden, mint visible, seafood aroma strong.
