👩🍳 How to make Pitha with Aloo Filling
- Mix rice flour with cooked dal, water, salt into smooth dough.
- For filling: heat mustard oil, add cumin, onion, fry 2 min, add ginger, chillies, cook 1 min.
- Add mashed potato, turmeric, chilli powder, salt, coriander.
- Mix well, cool.
- Divide dough into 12 portions, flatten each, add 2 tbsp filling, fold into half-moon, seal edges.
- Steam in greased steel bowl with water at rolling boil for 12 min.
- Visual cue: pithas should be soft, pale golden, no cracks on surface.
