👩🍳 How to make Pakora with Tamarind Chutney
- Mix gram flour with water until thick batter.
- Add onion, potato, capsicum, chillies, ginger, coriander, salt, chilli powder, cumin, asafoetida.
- Heat mustard oil to 170°C.
- Drop spoonfuls of batter, fry 3-4 min until golden-brown.
- For chutney: dissolve tamarind in water, add jaggery, salt.
- Simmer 5 min.
- Add cumin and asafoetida.
- Serve pakora hot with tamarind chutney.
- Visual cue: pakora should be golden-brown and crispy, chutney dark brown and thick.
