- Marinate mutton in yogurt, ginger, chillies, salt for 45 min.
- Boil rice half-cooked.
- Layer rice and mutton.
- Dot with ghee, fried onions, coriander, mint.
- Cover tightly.
- Cook on high heat 3 min.
- Reduce to low, cook 30 min.
- Rest 10 min.
