- Heat ghee, add khoya, cook 3-4 min stirring.
- Add jaggery, stir until melted and well mixed.
- Add cardamom, almonds, pistachios, salt.
- Mix well.
- Spread on greased tray, cool 10 min.
- Cut into squares.
- Cool completely.
- Visual cue: barfi should be fudgy, golden-brown, nuts visible as slivers, breaks cleanly.
