  1. Rinse rice.
  2. Heat ghee, add cumin, bay leaves, cloves, cinnamon.
  3. Cook 30 sec.
  4. Add rice, stir 2 min.
  5. Add peas, stir 1 min.
  6. Pour water and salt.
  7. Bring to boil, cover, reduce heat, cook 15 min.
  8. Rest 5 min covered.
  9. Fluff gently.
  10. Visual cue: peas should be bright green and tender; rice grains separate and fluffy.
