- Knead dough, rest 20 min.
- Mix sattu filling ingredients.
- Divide dough into 8 balls, stuff each, roll into discs.
- Bake at 200°C for 35 min, flipping halfway.
- For chokha: char vegetables on open flame until blackened, peel, mash roughly, toss with onion, chilli, coriander, mustard oil, salt, lemon.
- Serve broken litti pieces dipped in ghee with chokha on side.
- Visual cue: litti should have light golden-brown spots; chokha should be chunky and textured.
