👩‍🍳 How to make Kheer

  1. Rinse rice.
  2. Heat ghee in heavy pot, add rice, toast 3 min.
  3. Add milk, bring to boil.
  4. Reduce to low heat, stir occasionally.
  5. Simmer 25 min until rice is soft and milk reduces by half.
  6. Add jaggery, stir until dissolved.
  7. Add cardamom, cashew, raisins, saffron, salt.
  8. Cook 2 more min.
  9. Serve warm or chilled.
  10. Visual cue: kheer should be creamy, rice soft, golden color from jaggery, nuts golden and visible.
