👩🍳 How to make Kheer
- Rinse rice.
- Heat ghee in heavy pot, add rice, toast 3 min.
- Add milk, bring to boil.
- Reduce to low heat, stir occasionally.
- Simmer 25 min until rice is soft and milk reduces by half.
- Add jaggery, stir until dissolved.
- Add cardamom, cashew, raisins, saffron, salt.
- Cook 2 more min.
- Serve warm or chilled.
- Visual cue: kheer should be creamy, rice soft, golden color from jaggery, nuts golden and visible.
